I have been having a little break from my breakfast smoothies of late and have been making these banana and coconut pancakes for breakfast. They are incredibly tasty and are also great if you have guests over and you want to make a simple but impressive breakfast for them. I don't normally add the honey or maple syrup, as I find that they are sweet enough already.

Banana and Coconut Pancakes
- 2 eggs
- 1 banana, mashed
- 50 grams coconut protein powder (or 25 grams coconut flour)
- 1 tablespoon desiccated coconut
- 1 teaspoon vanilla extract
- 1 tablespoon almond milk (or coconut milk)
- Coconut oil for cooking
- Toppings - you can add sliced banana, berries or even some maple syrup.
Mix all ingredients (except the coconut oil) until you have a batter consistency.
Heat coconut oil in medium fry pan, add some of the mixture and cook for a few minutes, then flip over and cook for an extra 1-2 minutes until lightly browned. Then repeat with remaining mixture.
Add your favourite toppings and serve
