As promised, here is my recipe for my healthy nachos. This as well as my greek lamb pizza, they have been staples in my household for the past few years now. They both taste great and are so easy to make. This recipe serves 4-5 people and you can go nuts with what vegetables you add to the mince.
Serves 4 -5
1 tablespoon olive oil
500 grams organic mince
1 onion, diced
2 cloves garlic, crushed
Vegetables – choice of mushrooms, carrots, zucchini and capsicum (choose as many as you like)
Spices – paprika, cumin and chili flakes
Mountain bread (1-2 pieces of mountain bread per person)
Preheat oven to 180 degrees.
Add olive oil to fry pan on medium high heat.
Add onion and garlic and cook until soft.
Add mushrooms and cook for a few minutes, until they soften.
Add other vegetables and cook for about 5 minutes.
Add mince, crumble with a fork.
Add spices (amount depending on your tastes).
Cook until mince is browned and cooked through.
While mince is cooking, cut mountain bread into triangle pieces and place on a baking tray. Cook for 5 minutes or until golden brown and crunchy.
Serve with sliced avocado and greek yoghurt.
You can add chopped tomatoes to the mince. Fresh is best, but tinned does work also.
You can add red kidney beans to the mince.
Mash the avocado and the greek yoghurt together. Also a little bit of lemon added tastes nice.
