I have been experimenting with different flavours to find the perfect chicken drumstick that is nice and crunchy and also has a good amount of spice. I think I may have found the one! The good thing is that if you can adjust the amount of cayenne pepper to suit your spice level preferences. To make this a nice complete meal, I make my popular sweet potato fries (recipe coming soon) and steam some green vegetables.
Spicy Chicken Drumsticks
1kg chicken drumsticks
½ tablespoon dried basil
½ tablespoon oregano
1 teaspoon sea salt
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon smoked paprika
1 teaspoon pepper
1/4 - 1/2 teaspoon cayenne pepper (depending on how spicy you like it)
1 tablespoon olive oil
Preheat oven to 200 degrees Celsius (fan forced)
Place the chicken drumsticks in a large bowl, add the spices, and then drizzle with oil
Make sure you mix well so that the oil and spices are covering all the chicken.
Line a baking pan with foil or baking paper and top with a wire rack
Arrange chicken drumsticks out in a single layer
Bake chicken drumsticks until cooked through and skin is crispy, around 50 minutes. Make sure you rotate around the 25 minute mark
While the chicken legs are baking oil will slowly drip to the bottom of the baking pan and will ensure the chicken is nice and crispy
