Sugar Free Banana Bread Muffins

These sugar free banana bread muffins are delish!

They are only sweetened by the bananas! And YES they still taste amazing!

I am currently running and participating in the Gut Health Reboot Program and this month is all about the cleanse. Last month was all about the prep for the cleanse an part of that preparation was removing certain foods from my diet. 

One of the was all things sugar, so natural sweeteners for me as they contain quite a lot of fructose which can only be metabolized by the liver. We need our livers to focus on the cleanse process and so fructose is out. 

Sugar Free Banana Bread Muffins

So, I have been making up new recipes and also adapting some of my older ones, like my Banana & Macadamia Bread. I seriously do not need the sugar or sweetener when you can use fresh fruit to do that.

I then made up these banana bread muffins which are AH-MAZING!!

These are so easy to prepare and I usually use my Thermomix to make them, but have included both methods for you.

In addition to being sugar free, these muffins are gluten and dairy free.

Sugar Free Banana Bread Muffins

Gluten Free Banana & Macadamia Bread

Serves 4 - 6

Ingredients

  • 4 medium bananas (the riper the better)
  • 4 eggs
  • 250 grams nut spread (or any nut butter or spread will do)
  • 4 tablespoons coconut oil, melted
  • 1/2 cup almond meal
  • 3 drops cinnamon bark essential oil (or 1 tablespoon cinnamon)
  • 1 teaspoon gluten free baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • Pinch of sea salt
  • Optional - 1 small banana for decorating

Method

  1. Preheat oven to 180 degree celcius. 
  2. Line a 12-cup muffin tray with paper baking cases.
  3. Add all your ingredients to a food processor or high speed blender and process until well combined. 
  4. Spoon mixture evenly into the baking cases.
  5. Place in the oven and cook for 15-20 minutes. You can use a toothpick to check it, making sure it comes out clean.
  6. Set aside in the pan for 10 minutes before turning out onto a wire rack.

Thermomix Version

Serves 4 - 6

  • 60 grams almond meal
  • 3 drops cinnamon bark essential oil (or 1 tablespoon cinnamon)
  • 1 teaspoon gluten free baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • Pinch of sea salt
  • 1 small banana for decorating

Method

  1. Preheat oven to 180 degree celcius.

  4. Spoon mixture evenly into the baking cases.
  5. Place in the oven and cook for 15-20 minutes. You can use a toothpick to check it, making sure it comes out clean.
  6. Set aside in the pan for 10 minutes before turning out onto a wire rack.
