I had my first breakfast salad earlier this year when I had a weekend away with my besties. I had heard a lot about breakfast salads, but never had gotten around to making one. Don't make the same mistake as me - go make one this week! Let me tell you they are packed full of nutritious ingredients, they taste amazing, and this one is fairly easy to make.

One of my husband's favourite breakfasts is Eggs Benedict, but he rarely eats it, because even if he can find a gluten free option, the hollandaise sauce will often give him grief. So when the topic of breakfast salad came up, we knew we were only a healthy hollandaise sauce formula away from a winner. I found a recipe over at Paleo Cupboard that is dairy free, and really easy to make - so long as you have a good blender.

Oysters Kilpatrick with Healthy Worcestershire Sauce

There's a bunch of stuff in my life that makes me feel very fortunate - having healthy happy kids, living near my family, and getting to "work" on health and wellness  every day comes to mind. Something else that makes me feel fortunate is having some (fairly meager) views of both Port Stephens and the Tasman Sea from our balcony.

Apart from the view, and the awesome sunrises we get to see, living close to the ocean means that I have a pretty decent selection of fresh seafood on my doorstep. That said, we haven't always made the most of this, and that is a trend I plan on reversing (if you saw my Grilled Prawns (aka shrimp) recipe, you will know that I am already on the way).

Grilled Prawns with Lemon, Chili & Oregano

On Sunday, my husband and I attended The Paleo Way with Pete Evans, Nora Gedgaudas, Luke Hines and Wes Carr, and it was such an informative and rewarding experience. So it is only fitting that I bring you a recipe from Pete Evans' fantastic new cookbook, Healthy Every Day. The recipe that I chose is Pete's Grilled Prawns with Chili and Oregano, however I amended it slightly to include a bit more lemon.

Having recently completed my Advanced Diploma of Nutritional Medicine (which is a holistic nutrition course), it was refreshing to hear that the content covered in The Paleo Way, largely reinforced what I had studied and researched during my course. Even better was hearing it covered by Nora Gedgaudas, who is an internationally renowned speaker, author and expert on all things Paleo.
