I have been asked by a few of you to share some salads for Christmas that will go well with the Glazed Ham that I shared a few days ago. I realised that I have only shared a couple of salads on Becomingness since starting nearly a year ago. So, I will be fixing that up over the coming weeks. I do love a good salad, but when I am home I usually make plain salad or a Chicken Salad (see HERE and HERE). So I decided that I needed to spice it up a bit and share something else with you.
This Apple, Avocado, Cranberry & Walnut Salad is adapted from a similar salad I found over on Creme De La Crumb and I have added avocado and my own vinaigrette that I have used before. It got great reviews from my husband Jason (when I got back to the kitchen after taking the photos, he'd eaten the rest of it). This is also the time I have used my new plates from Sarah Schembri Ceramics. How pretty is my new bowl!!

Apple, Avocado, Cranberry & Walnut Salad
- 3 cups baby spinach
- 2 medium green apples, peeled, cored and sliced into small pieces
- 1 medium avocado, sliced
- 1 cup walnuts
- 1/3 cup dried cranberries
- 1/3 cup feta (optional), sliced into small pieces
- 1/4 cup coconut vinegar 'balsamic' style
- 2 teaspoons honey
- 1/2 teaspoon dijon mustard
- Pinch of sea salt and black pepper
Add the dressing ingredients to a small bowl and whisk well to combine.
Add the salad ingredients to a large bowl then pour the dressing over the top when ready to serve.
