Looking for another healthy breakfast alternative? Well you can't go past these banana oatcakes. They are seriously tasty and so easy to make. You can go crazy with what toppings that you use. My personal favourite is greek yoghurt, berries and organic honey.

Serves: Two people
- 1 ripe banana
- 1 egg
- ½ cup milk (I used almond milk)
- 1 tablespoon greek or natural yoghurt
- 1½ cups rolled oats
- 1/3 cup almond meal
- 2 teaspoons cinnamon
- Pinch of salt
- 1 tablespoon oil for cooking (I use either coconut or olive oil)
- Greek or natural yoghurt
- Fresh fruit (berries work well)
- Raw or Organic Honey
Mash the banana in a medium bowl.
Add egg, milk and yoghurt (one at a time), whisking after you add each one.
Add dry ingredients to the bowl and mix well.
Let the mixture sit for 15-30 minutess to allow it to thicken.
Place fry pan on medium heat and add some of the oil.
Spoon a few tablespoons of mixture into the pan and gently flatten.
Cook for a few minutes until the top bubbles and firms.
Carefully flip the oatcake and finish cooking.
Add topping and enjoy.
Note: You may want to add a little bit of oil to the fry pan before adding each oatcake.
