Caramel Chia Pudding


It has been two months since I shared my last chia pudding recipe (Chocolate Chia Pudding Cups) with you. Yes two months!! What was I thinking! I usually share chia puddings more frequently than that as I am a big fan of them, because 1) they taste amazing and 2) they are super easy to prepare.

 So, here is my latest chia pudding creation - Caramel Chia Pudding.

As you may or may not be aware, I recently became the owner of a Thermomix and have included instructions for the second part of the recipe, as the first part is really straight forward and requires the chia seeds to gel by absorbing the almond milk in the refrigerator for at least 3 hours.

This Caramel Chia Pudding tastes SO DAMN GOOD and it is gluten, dairy and refined sugar free as well as vegan friendly.

Caramel Chia Pudding

Serves 4


  • 1/2 cup chia seeds
  • 2 cups almond milk (or your preferred milk)
  • 1 cup (140 grams) macadamias
  • 1/4 cup (90 grams) pure maple syrup
  • 1/4 cup (60 grams) water
  • 4 dates, pits removed
  • 1 teaspoon vanilla extract


Place the chia seeds in a small bowl. Add the almond milk and mix really well. Cover and place in the refrigerator to thicken, approximately 3 hours.

Once the chia pudding mixture has thickened, process the macadamias, maple syrup, water, dates and vanilla extract in a blender or food processor until smooth. Then mix through the chia mixture, spoon into cups or bowls and serve.

NOTE: For Thermomix users -  Once the chia pudding mixture has thickened, process the the macadamias, maple syrup, water, dates and vanilla extract in your mixing bowl for 20 seconds on speed 7. Then add the chia mixture and stir for 10 seconds on speed 0.5 (reverse).
