Dairy Free Strawberries & Cream Chia Pudding

My love for chia seed puddings is well documented! Since starting Becomingness, I have created and shared seven different chia pudding recipes (well counting this one it will be eight). It is safe to say that they have won me over.

I love that they are super easy to make and then they set in the refrigerator overnight, while you are sleeping, ready for when you when you wake up. They really are the perfect, quick breakfast, especially if you find that you are in a rush to get ready and leave for work/school/kids dropoff etc.

So, I am always looking for new flavour combinations to try out, which leads me to today's creation, my Dairy Free Strawberries & Cream Chia Pudding.

This chia pudding, which works as either a breakfast or as a dessert/snack, is really flavoursome and nice and creamy (from the coconut cream). Not only is it dairy free, it is also gluten, nut and refined sugar free. I have included rice malt syrup in my version, but you could easily swap it for honey or pure maple syrup if you wanted. You could also omit the sweetener altogether. Totally up to you and what your preference is.

My kids lapped this one up, so I am going to making some more tomorrow for them to enjoy!

A few of my favourite other chia puddings that you can check out include Blueberry & Macadamia Chia Pudding, Apple & Walnut Chia Pudding, Caramel Chia Pudding and my Chia Berry Parfait

Dairy Free Strawberries & Cream Chia Pudding

Serves 2 - 4 (depending on whether you have for breakfast or dessert)

  • 350 grams fresh strawberries (plus extra for serving)
  • 250 ml Coconut cream
  • 2 tablespoons rice malt syrup (optional)
  • 1 teaspoon vanilla extract
  • 1/2 cup chia seeds

Add the strawberries, coconut cream, rice malt syrup (if using) and vanilla extract to a blender and blend until smooth.

Place the chia seeds in a large bowl and add the strawberries & cream mixture, mixing thoroughly until well combined. I recommend stirring the mixture thoroughly as the chia seeds can clump together.

Place in the refrigerator and allow to set for a minimum 4 hours, preferably overnight.

When ready to serve, add some fresh strawberries and enjoy.
