Friday Foodie: Kristy Zenk


Welcome to Friday Foodie for 2016!

If you are not familar with my Friday Foodie series. I started it in the first half of 2015 and each week on Friday, I feature a passionate foodie or wellness star who share their tips on healthy living and one of their favourite recipes.

It was an outstanding success and I have been really fortunate to have featured so many awesome and inspiring people. 

So this year, I have revamped the questions a little, and are pretty excited to be featuring even more people who inspire me every day to do what I do. Hopefully, they will inspire you too!

For my first Friday Foodie of 2016, I am featuring Kristy Zenk from Kristy has an amazing story and her recipes are stunning. I hope you enjoy the interview. 

Tell us a little bit about yourself, your family, what you do and what inspired you to lead a healthier lifestyle?

I’m originally from Geelong and moved to QLD about 15 years ago – totally solar powered as the gloomy weather in Geelong used to make me really lethargic. The sun shines brightly in QLD all the time, so you can’t help but be happy and active. I live in Brisbane with my husband Adrian who is a professional photographer – the occasional brilliant shots you see on my blog are all his! Mine are all the so-so ones, but I’m working on it!

My father was into health at least 40 years ago seeking solutions for his stomach pains and feeling generally poorly, so it was always around me however I think I ignored it for the longest time. Being overweight and miserable though in my 20s, sparked the interest and I started to explore from there.

What inspired you to start Slim Birdy?

When I found all the answers for myself regarding my weight and health, I couldn’t help but want to share it with everyone. However I found not everyone is interested to hear about it as they are all at different points in their journey or don’t agree and you come across as a bore or like the food police. So I learned to keep my mouth shut. The one thing they did like though is the healthy treats I used to bring to work and they all wanted the recipes!

So the Slim Birdy blog is my outlet to keep a record of my recipes and document everything I test out on myself, and the information I gather along the way. The idea then is that people who are interested can find it and hopefully it will help them too, and they won’t have to suffer for as long as I did with weight issues.

I try to keep it light hearted and fun because once it gets too heavy going and the technical terms starting flying, it bores me and so I’m sure it does to others as well.


What exciting plans do you have coming up in 2016?

I’m planning a couple of new ebooks, which I can’t reveal just yet and we have some travel trips booked in the first and second halves of the year. That’s the beauty of being married to a photographer, he will always suggest places with stunning landscapes! We are heading back to Queenstown NZ where we were married and to Tasmania where I have always wanted to go but never made it there for some reason. Out in nature is where we are happiest.

What is the number 1 tip you would give to someone who is just starting to make changes to their health and wellness?

Definitely the most important tip is to start with one small thing only and focus on changing that one thing until it just becomes what you do now and part of your lifestyle. Then move on to the next thing. So many people think they need this grand motivation to stick to that starvation or super strict diet and go to the gym 3 times a week. But really it’s all too much at once and you are just setting yourself up to fail. The idea is to change every day habits and that takes consistency not necessarily motivation.

Do you have any tips for eating well on a budget?

On a budget it’s all about more about sourcing your raw ingredients well. Especially fruit and vegetables, which should make up a majority of what you eat anyway. I remember waiting in line behind a lady at this great fruit shop which also did bulk trays of everything and she had a whole trolley full of fruit and veg and it only cost her $20!

What healthy dinner options would you suggest to someone who is time poor?

My two quickest and best recipes are baked salmon with veges and kelp noodles with tuna and rocket. Both take under 30mins and most of that time is just waiting for it to cook, the prep time is far less.


What is something that you enjoy doing when you have some ‘me’ time?

Walking in nature is definitely a refresher. Yoga is high up there too and definitely massages are the all time favourite. If anyone wants me to review their spa massage facility and write about it on my blog, I’ll be there with bells on!

What is your favourite recipe to cook? Can you share the recipe with us? 

My favourite recipe is what I call Chocolate Tweets. It’s a favourite because when I was just starting out on my health journey it blew me away that it was so easy to do and worked and that it was so much healthier than the store bough variety. I make it quite rich and fudgy and it avoids all the issues where the sweetener falls to the bottom when you just use coconut oil and cacao.


Chocolate Tweets


  • 1/4 cup coconut oil
  • 1 inch x 1-inch square of cacao butter
  • 1 TBS raw cacao powder
  • 2 TBS organic maple syrup (or rice malt syrup)
  • 1 TBS tahini
  • 1 TBS Peanut Butter
  • pinch of Himalayan rock salt


Melt cacao butter and coconut oil on very low heat or in a double boiler if you have a gas stove.

Take off heat and mix in the rest of the ingredients.

Spoon into cup cake papers. (Makes about 10-12)

Chill in fridge.
