Nut Free Coconut & Date Bars


I was recently asked if I was able to make a nut free base that could be used as a substitute for my raw slices and tart bases. So, I started experimenting and came up with a base that was really tasty and works well as a nut free option. I also decided that the base works really well on its own and thus, my Nut Free Coconut & Date Bars were born.

These bars which are gluten, dairy, nut and refined sugar free, contain four ingredients, which you process in your blender, food processor or Thermomix. Then the mixtures gets placed into a lined baking tin and placed in the freezer to set. How easy is that? Super simple for super delicious treat that is perfect for kids lunchboxes. In fact, my son took a few pieces to his daycare the other day. He is a big fan of them.

Nut Free Coconut & Date Bars

Makes approximately 30 square bars


  • 13 medjool dates, pitted
  • 2 cups shredded organic coconut
  • 3 tablespoons coconut oil, melted
  • 1 teaspoon vanilla extract


Add all ingredients to a food processor or high speed blender and process until it resembles fine crumbs and sticks together when pressed. Spoon mixture into a lined slice tin and press down and smooth with the back of a spoon. Place it in the freezer to set for 1 hour or until firm.

Then remove from the freezer and cut into desired portions and storm in an airtight container in the refrigerator.
