Thermomix Banana and Coconut Pancakes

Thermomix Banana and Coconut Pancakes

Serves 1


  • 2 eggs
  • 1 banana
  • 50 grams coconut protein powder (or 25 grams coconut flour)
  • 1 tablespoon desiccated coconut
  • 1 teaspoon vanilla extract
  • 1 tablespoon almond milk (or coconut milk)
  • Coconut oil for cooking


Add all ingredients (except coconut oil) to the mixing bowl and blend 30 seconds/speed 6

Heat coconut oil in medium fry pan on medium heat, add some of the mixture and cook for a few minutes, then flip over and cook for an extra 1-2 minutes until lightly browned. Then repeat with remaining mixture.
